Homemade vanilla extract & my whole wheat flour / baking soda mix for the cookies I made this morning.
To make vanilla extract, use a small bottle and one or two fat, fresh vanilla beans and 3/4 - 1 cup of the liquor of your choice. I cook with wheat & spelt flours frequently, so I make mine with bourbon. The beans need to soak in the bourbon in a cool, dark place for at least one month.
If you want a sweeter vanilla extract, you might try rum or cachaca, which are made with sugar cane. If you want a more pure vanilla flavor, use a grain neutral vodka.
These keep indefinitely, so long as your base is 40% alcohol or more.
I do NOT recommend vanilla beans from Whole Foods. They sell cheap, shriveled dry beans, which aren't worth a damn. You can get decent quality beans at Buon Italia (Chelsea Market) or Zabars (UES) and maybe Kalustyans on Lexington. If you must mail order, Penzy's in CT is good.
Whole Wheat Chocolate Chip Cookies

3/4 cup granulated sugar
3/4 cup packed brown sugar
1 cup butter or margarine, softened
1 teaspoon vanilla
2 cups Gold Medal® whole wheat flour
1 teaspoon baking soda
1/2 teaspoon salt
1 package (12 ounces) semisweet chocolate chips (2 cups)
1. Heat oven to 375?F.
2. Mix sugars, butter, vanilla and egg in large bowl. Stir in flour, baking soda and salt (dough will be stiff). Stir in chocolate chips. Drop dough by rounded tablespoonfuls about 2 inches apart onto ungreased cookie sheet.
3. Bake 8 to 10 minutes or until light brown (centers will be soft). Cool slightly; remove from cookie sheet. Cool on wire rack.
